Xavier Barriga is in love with bread. He loves the smell, the taste, the look and even the sound it makes when you break it up. Barriga, son of a baker, is the proud owner and mind behind of one of the most celebrated bakery groups in Barcelona. It started in 2005 with a first shop in Aribau and people cued up instantly to taste his wonderful creations. The secret is the natural leavening with sourdough –Barriga hardly uses yeast in any of his bread– and allowing the piece of bread to leaven 12 hours, or more. As a result, the bread is tasty, light and easy to digest, which means healthier. Barriga uses organic flour in some breads and special flours that come from millstone mills, which is why they are richer in nutrients and more tasty. You’ll find all kinds of white and wholewheat bread, croissants and other sweet treats and also breads baked with ingredients such as olives, seeds or even chocolate. If you, by any chance, meet with Xavier Barriga in the shop, be aware: he only needs a couple of minutes too make you fall in love with bread too.
